Unfortunately this is just a forum, there is no tracking of which ones have been included.
What is causing the delay? Do they need more people to volunteer to process requests? Do they need people with sysadmin skills to setup bug trackers etc? Do we need to fork the f-droid project?
I don't think there is any software in F-Droid (correct me if I am wrong) that is designed for tablets. In fact some software from F-Droid looks awful on tablets (everything, including menus, scaled up to fill the screen). I submitted a related feature request:
